The macadamia industry has been the work of many people. Dorran Bungay has been one of its leaders who, above all else, has utilised sound science and applied physics in a practical manner to all aspects of handling and preserving the finest nut in the world.
“Macadamias: An Overview and Guide to Preservation Principles and Engineering Practice,” promises to be a crucial handbook for global stakeholders. It elevates industry standards and provides essential insights for growers, processors, and equipment manufacturers, guiding newcomers with a step-by-step approach.
Dorran’s primary expertise is in engineering and he has had experience in many different fields over a long and very successful career. From his pioneering BUNGAY Macadamia Curing Plant to innovative concepts, his work has left an indelible mark. This 2nd edition, a culmination of his passion for over 30 years, updates industry practices and sets a new standard. It is Dorran’s legacy, generously shared to ensure the macadamia remains a ‘total taste experience’ for consumers.
Dorran’s high standards and his willingness to share his knowledge generously offers others the opportunity to proceed in their macadamia nut endeavours without his personal involvement; this is very much appreciated. His contribution to both SAMAC members and the rest of the global industry is enormous.
Everyone will learn from this book; for many, it will transform the way they think about all aspects of handling their crop. You will need to read, re-read and keep it closely available to absorb and implement the practical information it contains.

Since the mid 1990’s there has been un-precedented interest, investment and expansion in the South African macadamia industry. Dorran Bungay’s publication ‘Macadamias: Guide to Post Harvest Care’ in 2002 was a response to the demands of the ever conscious consumer for superior product. Dorran’s emphasis is on the adoption of correct post-harvest practice as the first step to ensuring that macadamia kernel quality is maintained through the entire supply chain to the end consumer.
The modern day macadamia industry, both locally and internationally, would certainly not be achieving the growth and success currently being experienced without the work, knowledge and guidance of individuals such as Dorran Bungay. Dorran has generously devoted many hours of his time and knowledge over the past decades to assist in the development of this fledgling industry, as well as being a driving force behind the adoption of many post-harvest practices currently in use by growers and processors/consolidators alike. It is through these post-harvest practices that South Africa, in particular, has been able to distinguish itself as a quality supplier of macadamias on the international stage.
This tome is the result of many hours of dedicated work by Dorran, and on behalf of SAMAC, the Board of Directors and our members, I would like to thank and congratulate him. The high standard and quality of this publication only cements Dorran’s position as the authority in post-harvest care and management, and sets the benchmark to which those invested and expanding in the macadamia industry need to achieve.

My dad is a ‘jack of all trades’, and a significantly noteworthy master of (at least) one – Macadamias! There isn’t a hint of a single question about macadamias that is not answered in this… his opus.
Every scenario, from North vs. South facing farms, the microbiology of macs, factory needs for safe harvesting, curing and transporting, the requirements for staff – adequate lighting, ventilation and protective equipment – and financial management, as well as the demand and uses for macs – from comestibles to cosmetics, is explained in eloquent and intelligible detail.
The only question one would have after perusing this book is, ‘How did Dorran manage to gather everything I need to know about macadamias in one book?’
Thank you for allowing me to be part of your 30-year-long journey. My dad – the Master of Macs!
